I made this last night and it was FANTASTIC! To make it much healthier, I blended greek yogurt, lemon juice, and basil to make the "basil cream." Much lighter than using cream.

MMM. Just last night, I pureed fresh butternut squash with a splash of skim milk to make a thick soup, then added lentils, peas, corn, carrots, chickpeas and sprinkled with a bit of chipotle sauce...
