i agree with a rich slate blue/gray color on the walls. i think that would look best with the counters/backsplash and flooring. then i'd keep the dining set neutral and maybe use the wall color y...

if you want to go with a cheap roman shade and make them custom yourself, here's a great tip on how to make them from regular old mini-blinds!! (oh yeah, and they're no sew! genius.)

i think roman shades would work well with all of your windows, but if you must cover the moldings, then i would place the rod between the crown and the window molding.
HA! of course i picked out the most expensive one...i'm that person that goes to those value stores like marshall's and manages to be attracted to the most expensive piece in the place. go figure.
