Love them, but they are so much better sauteed than fried ... properly cooked the shells should have a nice crunch, not be chewy.
Robiola Rocchetta is my favorite, but I've found and enjoyed the Rosetta here in DC not too long ago. I find robiola is a great starter cheese for people who claim not to like sheep or goat milk ch...
