I would make the mini fritattas in a muffin pan, a good quality protein for breakfast is key. throw in some pancetta and spinach for more flavor.
they also make a great lunch or snack.
as someone who grew up eating many a bread puddings cooked lovingly by my nostalgic english father... don't kid yourselves, this is a carbattack.

there is a nice brand of oat milk in the UK called Oatily, and they also make an "oat cream" that is wonderful with berries!
